Kombucha Softacos

Ingredients:

1/2 Kombucha Squash, peeled and shredded

1/4 - 1/2 Sweet Maui Onion, minced

1 Clove Garlic, minced

1 Red Pepper, diced

1 - 2 Tomatoes, diced

1 Bunch Parsley, chopped

1 Bunch Cilantro, chopped

1/2 Cup Pine Nuts

1 Avocado, diced

1 Ear of Corn, cut off the cob

Dash Umeboshi Plum Vinegar, to taste

1 Key Lime or Lemon, zested and juiced

Pinch Cayenne Pepper, or a little Chipotle

Leaves to use as soft taco shells

Sprouts as garnish on top

Mix all ingredients except garnish and leaves. It should be a little like salsa (add more garlic and onions if you're a spicy type). I encourage you to add more flavor with herbs and spices - play with your food, experiment, be joyful and know that you are working with nutrient rich food that your body will soak up like the sun and you'll start to radiate health. Love your food while preparing it and it will love you.

Optionally you can mix a little Tahini, Umeboshi Plum Vinegar and Water together and use as a sauce to drizzle over your soft tacos. Play with the herbs in this sauce for many variations on sauces - curry, cumin, coriander, caraway, fennel, add a little turmeric for its soothing anti-inflammatory properties, etc.

Liliko'i Limeade goes good with this. Just Passion Fruit strained, Limes juiced, Water and ground Stevia to taste. I put in organic frozen grapes as sweet edible fun ice cubes. Try raw agave nectar in place of stevia if you like. (you can use whatever fruit you have to make drinks, just squeeze the juice into water and be creative),
